Sweet Potato & Coconut Energy Bites

I love to have little snacks with me where i know all the ingredients, saves me money, satisfies my hunger, and gives me a little boost of sustained energy. I have these little sweet potato and coconut energy bites a few times. I love them! They are super easy to make, can contain whatever ingredients you love the most, and last in the freezer so I don’t have to make them very often.


Ingredients:

2 medium sweet potato

1/2 cup of water (or liquid of your choice, milk, dairy alternative, coconut milk)

4 TBS of protein powder of your choice (I like a pea protein without any whey)

2 TBS of cinnamon

3 TBS of cocoa powder

1 cup of pumpkin seeds

1/2 cup of coconut flakes or cubes

1/2 cup of pomegrantes (or dried blueberries, cranberries, fruit of your choice)

3 TBS of chia seeds

3 TBS of flax seeds

3 TBS of hemp hearts


Directions:

Boil sweet potatoes until soft. Roasting gives them some added flavor that I don’t want in this snack.

Mash sweet potatoes with water or liquid of your choice. You don’t want them too soft like mashed potatoes. You want them to have some chunks so they hold together.

When you have a good consistency start adding all your ingredients. WIth a large wooden spoon or spatula, begin mixing everything together. This should be very chunky. Pumpkin seeds and coconut pieces will help hold the bites together so they aren’t too gooey. Place in the fridge for a couple hours.

Spoon into a small balls on to a tray or plate. Put them in the freezer overnight. When they are frozen solid put them into a ziplock.

Take a couple out at night for the next day. I put them directly into a container that I can throw into my bag so I don’t have to do any more transferring the next day.

To use pre or post-workout: I pair two energy bites with two boiled eggs and snack directly before or after my workout depending on how hungry I am. This helps replenish my muscles energy stores. Carbohydrates are what help your muscle store energy so your muscles can keep working. Protein helps your muscles recover from the work it has done. You want to pair both of these for better workouts and recovery time.
